Banana Curd


12 ounces of sugar
1 large lemon(you need the juice and the rind)
4 large ripe bananas, they need to be ripe but not black
4 large eggs
5 ounces butter,not marg.
Mash the bananas very well.
Prepare the lemon.
Whisk the eggs
In a double pan melt the butter, add the sugar, juice and rind of the lemon and the bananas.
Bring to a very gentle simmer and cook for about 10 minutes.
Add some of the banana mixture to the bowl containing the whisked eggs, quickly beat it, then return all to the pan.
Bring back to temperature, keep stirring, it will thicken after a while, do not let it boil.
When it is thick enough to coat the back of a spoon, ladle it into hot sterilised jars and seal.

....I received 12 gorgeous dark brown eggs yesterday - I have never seen Maran eggs like that before in my life. ... Was the best of packaging...
